A variation on lemon meringue pie.
A lovely moist light lemon sponge cake topped with a layer of meringue. For an additional splash of luscious lemon, spread each slice with some homemade lemon curd.
If you like the sponge, the recipe, has been taken from Mary Berry’s Ultimate Cake Book. However, topping it with meringue was idea from somewhere else.
